Smooth Broccoli Crème

Ingredients
  

  • Aceto Sopraffino or Aceto Sopraffino Riserva
  • 300 g Broccoli
  • ½ Onion
  • 100 g Potatoes
  • 30 g Butter
  • 200 cl Milk
  • To taste Pepper
  • To taste Nutmeg
  • 3 cl Liquid cream
  • 500 cl Vegetable broth

Instructions
 

  • Remove the broccoli tips from their centre stalk.
  • Chop the potatoes and onion, then cook the ingredients together in the broth for 20 mins.
  • Pour into the mixer, season with the butter, milk, pepper and nutmeg, then whirl.
  • Check that the required smoothness is reached, then add the cream.
  • Dress with either 4 ml of Aceto Sopraffino, or 4 ml of Aceto Sopraffino Riserva.

Notes

The tests we have run have also shown that Aceto Sopraffino or Aceto Sopraffino Riserva do very well with a smooth broccoli crème as well. As broccoli, with their typically bitterish flavour, are the main ingredient of this recipe, we have noted that by adding the same quantity of either Aceto Sopraffino or Aceto Sopraffino Riserva, the relative sweet-sour aroma refines the flavour and improves palatability with touches of spices and aromas.
