Testing shows that combining Aceto Sopraffino and Aceto Sopraffino Riserva with vegetables is always optimal, but particularly if the vegetables in question used have an acidulous flavour. The same occurs with very starchy elements. We can thus affirm that Aceto Sopraffino and Aceto Sopraffino Riserva can act as palatability boosters and aroma blenders in dishes having both a starchy as well as an acidulous vegetable base, which in this case are leeks as leeks in this case.
