- Aceto Sopraffino or Aceto Sopraffino Riserva
- 200 g Stracchino
Instructions
- Arrange 100 grams each on two serving plates and season moderately using the vinegar, i.e. dress with either 1.0 ml of Aceto Sopraffino, or 1.0 ml of Aceto Sopraffino Riserva.
Notes
By testing the various types of cheeses we have determined that the Aceto Sopraffino’s and Aceto Sopraffino Riserva’s sensory organoleptic qualities blend in very well with fresh cheese flavours but that they actually do not do very well with seasoned or aged cheeses. The test performed with soft, fresh “Stracchino” cheese thus turned out some really remarkable results as its sensorial fattiness combines very well with both Aceto Sopraffino and Aceto Sopraffino Riserva, the actual purpose of which is to improve palatability and flavour persistency and to reduce fatty flavours. Use of Aceto Sopraffino Riserva ensures overall, added spiciness to the cheese and flavour boosts.

OUR VINEGAR
Both Aceto Sopraffino and Aceto Sopraffino Riserva do equally well with soft, fresh “Stracchino” cheese varieties.
