Spaghetti with Fresh Tomato

Ingredients
  

  • Aceto Sopraffino Riserva
  • 150 g Spaghetti
  • 200 g Ripe tomato
  • ½ Onion
  • 1 Garlic clove
  • To taste Pepper
  • 1 Coffee spoon of sugar
  • 4 Tablespoons of olive oil
  • 6 Fresh basil leaves
  • To taste Oregano

Instructions
 

  • Brown the chopped onion and garlic in a frying pan. Peel and seed the tomatoes and pass through a food mill.
  • Sieve them, pour the sauce into the pan and cook slowly for 20 – 30 minutes, add sugar, cover and stir occasionally.
  • Break up the basil with your fingers and toss it with the oregano, pepper.
  • Allow the sauce to reduce and note the acidity.
  • Cook the pasta, pour ml. 3.0 of Aceto Sopraffino Riserva into the sauce, then serve the spaghetti.

Notes

In various dish preparations, we verified that Aceto Sopraffino Riserva paired well with fresh tomato sauce. Realizing that the acidity of the tomato is balanced with the sweet and sour flavor of Sopraffino riserva, we verified that it softens the sour aftertaste of the sauce by sweetening it and giving it a spicy aroma. Aceto Sopraffino riserva imparts the typical taste of fresh tomato sauce to the palate.
