Ingredients
- Aceto Sopraffino
- 4 Eggs
- 200 g Potatoes
- To taste Salt
- To taste Pepper
- 2 Tablespoons of olive oil
Instructions
- Beat eggs with a little salt, pepper, and overpowering vinegar.
- Reduce the potatoes to flakes or thin slivers.
- Cook the potatoes in olive oil until they are browned and cooked enough without becoming crispy.
- Then remove them from the pan and let them rest in a paper towel.
- Coat a small frying pan with oil then put in the potatoes and beaten egg.
- Cook slowly for a few minutes then turn the omelet over and cook the other side.
- Serve after checking for proper consistency.
